After placing into a saucepan, gradually bring the milk, cream and vanilla (pod) to a gentle simmer over a low heat.
(if using a vanilla pod remove it at this stage)
Briskly whisk the yolks, sugar and cornflour together in a bowl until well combined.
Gradually pour the warm milk and cream onto the eggs, sugar and cornflour, whisking as you do so.
(if using a vanilla extract add it at this stage)
When all the ingredients are combined return them to the pan and over a low heat gently stir with a spatula until the mixture has thickened.
Pour the custard into a jug, serve and enjoy
